Ingredients
Salad
- 5 oz (about 5 cups) mixed
- spring greens or baby spinach
- 1⁄2 cup strawberries
- 1⁄2 cup blueberries
- 1⁄4 cup crumbled feta cheese
- 1⁄4 cup shelled pistachios (roasted and unsalted preferred)
- red onion, thinly sliced (optional)
- 1⁄4 avocado, sliced
Dressing
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- 1⁄2 tsp Dijon mustard
- salt and black
- pepper, to taste
Directions
- In a large salad bowl, add the mixed greens.
- Layer in the sliced strawberries, blueberries, red onion (if using), feta, and pistachios.
- Add all the dressing ingredients in a small bowl or jar and blend well.
- Drizzle the dressing over the salad just before serving and toss gently.
- If using avocado, add it to the top of the salad and serve immediately.
